Energizing Fig-Chia-Coconut Pudding
This is a quick and easy energizer ideal for breakfast or a snack.
Thanks to the combined nutrients in figs and chia seeds, it is rich in protein and fiber; important minerals like calcium, magnesium and iron, and essential fatty acids.
Thanks to the fiber, both can help with feeling full therefore with weight-control and to aid digestion.
Chia are also a great food for diabetics because they control the blood sugar levels.

Chia means “strength” in the language of the Mayans, and was considered running food because messengers could run all day with the help of these tiny seeds. Chia seeds were considered medicine and were actually prized more than gold due to their incredible health enhancing properties.”
Ingredients for one serving:
About 5 figs
150 ml coconut milk
2 tbsp ground chia seeds
Roughly chop the figs and blend them in a food processor, then add the coconut milk, keep blending and add the ground chia seeds.
Let sit for a few minutes to thicken, then decorate with some figs cut in quarters. Then serve and enjoy the energy rush
